Ingredients
- 5 lbs boneless, skinless chicken breasts
- 1 (16 oz) jar pepperoncini peppers
- 1 medium yellow onion
- 4 cloves garlic
- 2 tablespoons extra virgin olive oil
- 1/2 cup low-sodium chicken broth
- 1/2 cup heavy cream
- Italian seasoning and red pepper flakes to taste
Instructions
- 1. Pat chicken cubes dry, season with salt and pepper.
- 2. Heat olive oil in a large skillet over medium-high heat. Add chicken; cook until browned (5-7 minutes). Remove from skillet.
- 3. In the same skillet, sauté chopped onion for 5 minutes; add minced garlic and cook for another minute.
- 4. Pour in reserved pepperoncini juice; add chopped peppers, broth, seasoning, and red pepper flakes. Stir well.
- 5. Simmer for about 5 minutes; then add heavy cream and let thicken.
- 6. Return chicken to skillet; stir to coat with sauce.
