  • ½ cup buttermilk
  • 2 cups shredded coconut (sweetened or unsweetened)
  • 1 ½ cups heavy whipping cream
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 23 drops pink food coloring
  • 1 tbsp milk (to moisten coconut if needed)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In one bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, cream softened butter and granulated sugar until fluffy. Add eggs and vanilla; mix well.
  4. Gradually incorporate dry ingredients and buttermilk into the butter mixture until smooth.
  5. Pour batter into the prepared pan and bake for 25–30 minutes until a toothpick comes out clean. Let cool completely.
  6. For the topping: whip heavy cream with powdered sugar and vanilla until fluffy. Fold in shredded coconut tinted with pink food coloring.
  7. Spread the coconut mixture over the cooled cake base, chill for one hour before slicing into bars.
