Ingredients
- 8–12 medium roasting potatoes
- 200 g feta cheese (crumbled)
- 3 tbsp small capers or sliced black olives
- 2 large cloves garlic (sliced)
- 1 red onion (thinly sliced)
- Fresh rosemary sprig (torn)
- 1 lemon (cut into quarters)
- Olive oil (for drizzling)
- Salt and pepper (to taste)
Instructions
- 1. Preheat the oven to 200C (400F) and drizzle olive oil in a large skillet or roasting tray.
- 2. Rinse the potatoes and pierce them with a knife for even cooking.
- 3. Microwave the pierced potatoes covered with damp paper towels on full power for 7-12 minutes until tender.
- 4. Smash each potato gently in the skillet while keeping their shape intact.
