  • 120 grams powdered sugar
  • 2 large egg whites (at room temperature)
  • 50 grams granulated sugar
  • 1/4 cup freeze-dried raspberries
  • 3/4 cup fresh or frozen raspberries
  • 6 tbsp unsalted butter (at room temperature)
  • 2 tbsp granulated sugar
  • 1 tbsp lemon juice

Instructions

  1. Preheat oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. Blend almond meal and powdered sugar in a food processor, sift into a bowl.
  3. Whip egg whites until foamy; gradually add granulated sugar and continue until stiff peaks form.
  4. Fold the dry ingredients into the whipped egg whites until the batter flows like lava.
  5. Pipe rounds onto prepared baking sheets; rest for at least 30 minutes.
  6. Bake for about 15 minutes; cool completely before filling with raspberry buttercream made from whipped butter, raspberry syrup, and additional ingredients.
