  • 1 egg
  • 2 teaspoons vanilla extract
  • ½ cup buttermilk
  • 2 cups all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 12 teaspoons red gel food coloring
  • ¼ cup butter (softened)
  • 4 ounces cream cheese (softened)
  • 7 ounces marshmallow crème
  • Pinch of salt (to taste)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter and brown sugar until fluffy. Mix in the egg and vanilla extract, then stir in buttermilk.
  3. In another bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually mix this into the wet ingredients until just combined.
  4. Gently fold in red gel food coloring until desired shade is achieved.
  5. Use a cookie scoop to drop rounded tablespoons of dough onto the prepared baking sheet, spacing them apart.
  6. Bake for about 10 minutes or until edges are set; let cool on the baking sheet for a few minutes before transferring to a wire rack.
  7. For the filling, beat together softened butter, cream cheese, marshmallow crème, and salt until smooth.
  8. Once cookies are cool, spread cream cheese filling on one half and top with another.
