  • 2 ¼ cups Graham Cracker Crumbs
  • 5 tbsp White Sugar
  • 10 tbsp Unsalted Butter (melted)
  • 32 oz Cream Cheese (well softened)
  • 3/4 cup White Sugar
  • 1/2 cup Liquid Honey
  • 1 tbsp Vanilla
  • 3/4 tsp Kosher Salt
  • 3 Large Eggs (at room temperature)
  • 2 Large Egg Yolks (at room temperature)
  • 3/4 cup Heavy Cream
  • 3/4 cup Sour Cream
  • 1 tbsp Cornstarch
  • 1/2 cup Full-Fat Sour Cream
  • 1/2 cup Liquid Honey
  • 1/41/2 tsp Table Salt (to desired saltiness)

Instructions

  1. Preheat oven to 350°F (175°C). Mix Graham cracker crumbs, sugar, and melted butter in a bowl; press into the bottom of a springform pan.
  2. Beat softened cream cheese until smooth; add sugar, honey, vanilla, and salt. Mix well before adding eggs one by one.
  3. In another bowl, combine heavy cream and cornstarch; fold into cheesecake mixture.
  4. Pour filling over crust and bake for about 90 minutes until slightly wobbly in the center. Cool gradually in the oven for an hour.
  5. Refrigerate for at least four hours before serving topped with a mixture of sour cream, honey, and salt.
