  • 23 garlic cloves (minced)
  • 1 can (8 oz) tomato puree
  • 1 can (14 oz) crushed tomatoes
  • 13 cups chicken broth
  • 1 teaspoon dried basil
  • 1 cup cream cheese (chopped)
  • ¼ cup grated parmesan cheese
  • Kosher salt and freshly ground black pepper

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sauté onions for about 4–5 minutes until softened.
  2. Add the sausage, breaking it apart with a spatula, and cook until browned. Stir in minced garlic and cook for an additional minute.
  3. Pour in the tomato puree, crushed tomatoes, chicken broth, and dried basil; bring to a boil then reduce to simmer for 10–15 minutes.
  4. Incorporate chopped cream cheese and half of the parmesan; stir until melted and smooth. Adjust consistency with more broth if needed.
  5. Season with salt and pepper to taste; serve hot garnished with remaining parmesan and fresh parsley.
