Ingredients

  • Day-old cooked jasmine rice
  • Medium shrimp (peeled & deveined)
  • Crab meat (fresh or imitation)
  • Eggs
  • Carrots
  • Green peas
  • Red bell pepper
  • Green onions
  • Soy sauce
  • Sesame oil

Instructions

  1. Marinate shrimp and crab with soy sauce, sesame oil, garlic, ginger, lemon juice, and white pepper for 10–15 minutes.
  2. Chop vegetables into uniform pieces for even cooking.
  3. Heat a wok over high heat until smoking; add vegetable oil.
  4. Stir-fry marinated seafood until shrimp are pink; remove from wok.
  5. Add garlic, ginger, and onions to the wok; stir-fry until fragrant.
  6. Incorporate carrots, peas, and bell peppers; cook until crisp-tender.
  7. Push veggies aside; scramble beaten eggs on the other side until set.
  8. Add cold rice to the mixture; break apart clumps and combine well.
  9. Pour in soy sauce and oyster sauce; stir quickly to coat rice evenly.
  10. Return seafood to the wok; toss everything together with butter for added richness.
  11. Garnish with green onions before serving.
