Ingredients
- 1 lb cooked shrimp (peeled and deveined)
- 1/4 cup fresh lemon juice
- 1/4 cup fresh lime juice
- 1/2 cup fresh squeezed orange juice
- 4 plum tomatoes (diced)
- 2 jalapeño peppers (minced)
- 1 cup diced jicama
- 1/2 cup chopped fresh cilantro
- 1/4 cup finely chopped red onion
- 1 avocado (diced)
- Kosher salt and fresh ground pepper
Instructions
- Chop the shrimp into ½ inch pieces and place them in a mixing bowl.
- In a separate bowl, whisk together lemon juice, lime juice, and orange juice. Pour half over the shrimp and toss gently. Marinate for 15 minutes.
