Ingredients
- 4 salmon fillets
- 1.5 tbsp olive oil (for salmon)
- 4 cups spinach (fresh or frozen)
- 6 oz feta cheese (crumbled)
- 1/3 cup Parmesan cheese (grated)
- 1/4 cup roasted red peppers (chopped)
- 1 tbsp olive oil (for filling)
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- 1 pinch cayenne pepper
- 1/2 tsp garlic powder

Instructions
- Preheat your oven to 375°F (190°C).
- Butterfly each salmon fillet by slicing through one side without cutting all the way through, then open like a book.
- Season both sides of the fillets with salt and black pepper.
- In a mixing bowl, combine 1 tbsp olive oil, spinach, Italian seasoning, paprika, cayenne pepper, feta cheese, Parmesan cheese, roasted red peppers, garlic powder, salt, and black pepper.
- Spoon the filling into each butterflied salmon fillet and gently press to secure.
- Place the stuffed salmon in a baking dish and drizzle with an additional 1.5 tbsp olive oil.
- Bake for about 10 minutes or until cooked through and flaky.
