  • 15 oz chickpeas, rinsed and drained
  • 3 cups arugula

  • 1/2 cup sun-dried tomatoes

Instructions

  3. In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, and salt to create the dressing.
  4. In a large bowl, combine cooked orzo with chickpeas, arugula, olives, sun-dried tomatoes, feta cheese, almonds, red onion, basil, and parsley. Drizzle dressing over the mixture.
