  • 4 cups beef broth
  • 6 dried guajillo chiles
  • 2 dried ancho chiles
  • 3 lb beef stew meat
  • 1 small yellow onion
  • 2 tbsp avocado oil
  • 1/4 cup gluten-free all-purpose flour
  • 1 tsp ground cumin
  • 2 tsp dried oregano
  • 1 tsp sea salt
  • 2 tsp garlic powder
  • 1/2 tsp black pepper
  • 2 dried arbol chiles
  • 2 bay leaves

Instructions

  1. Remove stems and seeds from chiles; toast in a dry skillet until fragrant (2-3 minutes). Soak in hot water for 20 minutes.
  2. Blend soaked chiles with beef broth, cumin, oregano, garlic powder, salt, and black pepper until smooth.
  3. In a pan, heat avocado oil and brown seasoned beef coated with flour (5-7 minutes).
  4. Combine onion and browned beef in the slow cooker; pour blended sauce over top with bay leaves.
  5. Cook on low for about 4 hours until meat is tender.
  6. Remove bay leaves and serve hot.
