- 3 lbs beef stew meat
- 6 dried guajillo chiles
- 2 dried ancho chiles
- 2 dried arbol chiles (optional for heat)
- 4 cups beef broth
- 1 small yellow onion
- 1 tsp ground cumin
- 2 tsp dried oregano
- 1 tsp sea salt
- 2 tsp garlic powder
- 1/2 tsp black pepper
- 2 tbsp avocado oil
- 1/4 cup gluten-free all-purpose flour
- 2 bay leaves
Instructions
- Remove stems and seeds from all dried chiles.
- Toast the chiles in a dry skillet over medium heat for 2-3 minutes until fragrant.
- Blend toasted chiles with beef broth, cumin, oregano, sea salt, garlic powder, and black pepper until smooth.
- Brown the beef stew meat in avocado oil in batches.
- Transfer browned meat to a slow cooker; add chopped onion and blended sauce. Stir gently to combine.
