  • 1 large onion, finely diced
  • 2 tablespoons gochujang
  • 2 tablespoons dark soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon packed light brown sugar
  • 1 tablespoon garlic ginger paste
  • 14 ounces ox cheek (or suitable substitute)
  • 4 pouches ready-to-use udon noodles
  • Fresh coriander and black sesame seeds for garnish

Instructions

  1. In a slow cooker, mix onion, gochujang, dark soy sauce, rice vinegar, brown sugar, garlic ginger paste, and beef stock until well combined.
  2. Place ox cheek on top of the sauce mixture. Cover and cook on low for 8 hours.
  3. After cooking, shred the beef with two forks and return it to the slow cooker.
  4. Add udon noodles and fresh coriander; switch to high heat and cook for an additional 25 minutes.
  5. Season to taste with salt and pepper before serving hot, garnished with black sesame seeds.
