Ingredients

Scale
  • 1/2 cup whole milk
  • 1/2 cup water
  • 2 tsp dry active yeast
  • 410 grams bread flour (2 1/2 cups plus 3 Tbsp)
  • 1/3 cup packed brown sugar
  • 1 tsp salt
  • 1/2 teaspoon baking powder
  • 2 tbsp unsalted butter (melted)
  • For boiling: 2 cups warm water, 2 tbsp baking soda
  • For topping: 6 tbsp melted unsalted butter, coarse pretzel salt

Instructions

  1. In a mixing bowl, combine warm milk and water. Sprinkle yeast on top; let sit for about 5 minutes until foamy.
  2. Mix in brown sugar, melted butter, salt, and baking powder. Gradually add bread flour until dough forms; knead until smooth.
  3. Place dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes or until doubled.
  4. Preheat oven to 450°F (232°C). Punch down dough and divide into six pieces; roll into ropes and shape into pretzels.
  5. In a pot, bring warm water to boil; add baking soda. Boil each pretzel for about 30 seconds using a slotted spoon. Place on parchment-lined baking sheet and sprinkle with coarse salt.
  6. Bake for about 8 minutes or until golden brown. Brush with melted butter before serving.
