  • 1/2 cup chopped onion
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeño pepper, finely chopped
  • 1 clove garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1 cup shredded cheddar cheese
  • 1 egg (beaten)
  • 1 can (15 oz) Mexican-style tomatoes with green chilies
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix the ground beef, onion, cilantro, jalapeño, garlic, cumin, chili powder, smoked paprika, salt, and pepper until combined.
  3. Fold in the cheddar cheese and crushed tortilla chips.
  4. Add the beaten egg and mix well.
  5. Shape the mixture into golf-ball-sized meatballs.
  6. Heat olive oil in an ovenproof skillet over medium heat and sear the meatballs until browned on all sides (about 5 minutes).
  7. Pour the canned tomatoes over the meatballs and transfer to the preheated oven.
  8. Bake for about 15-20 minutes or until cooked through.
  9. Serve hot with fresh lime wedges on the side.
