  • 1 pound large mushrooms (Cremini or Portobello)
  • 1 cup cooked chicken (shredded or diced)
  • 5 ounces fresh spinach (roughly chopped)
  • 4 ounces cream cheese (softened)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup breadcrumbs (Panko preferred)
  • 3 cloves garlic (minced)
  • 1/2 medium yellow onion (finely chopped)
  • Olive oil, salt, and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Clean mushrooms with a damp paper towel and remove stems.
  2. Finely chop the stems and sauté in olive oil with onions and garlic until softened.
  3. Add spinach until wilted; transfer to a bowl and mix with cream cheese until smooth.
  4. Stir in chicken, cheeses, breadcrumbs, salt, pepper, and nutmeg if desired.
  5. Spoon filling into mushroom caps and place in a greased baking dish.
  6. Top with extra breadcrumbs and bake for 20–25 minutes until golden brown.
