- 1 pound large mushrooms (Cremini or Portobello)
- 1 cup cooked chicken (shredded or diced)
- 5 ounces fresh spinach (roughly chopped)
- 4 ounces cream cheese (softened)
- 1/4 cup grated Parmesan cheese
- 1/4 cup shredded mozzarella cheese
- 1/4 cup breadcrumbs (Panko preferred)
- 3 cloves garlic (minced)
- 1/2 medium yellow onion (finely chopped)
- Olive oil, salt, and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Clean mushrooms with a damp paper towel and remove stems.
- Finely chop the stems and sauté in olive oil with onions and garlic until softened.
- Add spinach until wilted; transfer to a bowl and mix with cream cheese until smooth.
- Stir in chicken, cheeses, breadcrumbs, salt, pepper, and nutmeg if desired.
- Spoon filling into mushroom caps and place in a greased baking dish.
- Top with extra breadcrumbs and bake for 20–25 minutes until golden brown.
