Ingredients
- 2 medium sweet potatoes
- 1 can (15 oz) black beans, rinsed and drained
- 1 ripe avocado, diced
- 1 cup corn (fresh, frozen, or canned)
- ½ cup cherry tomatoes, halved
- ¼ cup red onion, finely chopped
- ¼ cup fresh cilantro, chopped
- Salt and pepper, to taste
- ½ cup Greek yogurt
- 1 tablespoon lime juice
Instructions
- Preheat oven to 400°F (200°C).
- Pierce sweet potatoes with a fork and place on a baking sheet.
- Bake for 45-60 minutes until tender.
- Cool slightly and slice each potato in half lengthwise.
- Scoop out some flesh to make room for filling.
- In a bowl, combine black beans, avocado, corn, tomatoes, onion, cilantro; season with salt and pepper.
- In another bowl, whisk Greek yogurt with lime juice and cilantro until smooth.
- Fill each potato half with the bean mixture and drizzle with crema.
