Ingredients

Scale
  • 3 lbs short ribs
  • 1 cup red wine (Cabernet Sauvignon recommended)
  • 1 large onion
  • 4 cloves garlic
  • 2 lbs potatoes (Yukon Gold or Russet)
  • 4 tablespoons unsalted butter
  • 1/2 cup whole milk
  • Fresh herbs (thyme, rosemary)

Instructions

  1. Preheat your Dutch oven over medium-high heat. Sear short ribs until browned on all sides; remove and set aside.
  2. In the same pot, sauté chopped onion and minced garlic until softened.
  3. Deglaze the pot with red wine, scraping up any browned bits; simmer until reduced.
  4. Return ribs to the pot with fresh herbs; cover with water or broth.
  5. Bring to a boil, then reduce heat to low and simmer for 3 hours until tender.
  6. While ribs cook, peel and chop potatoes; boil until fork-tender.
  7. Drain potatoes, return to pot, add butter and milk, and mash until creamy.
  8. Serve short ribs over mashed potatoes, garnished with herbs if desired.
