- 2.5 lb pork loin roast
- 1.5 lbs sauerkraut (drained and rinsed)
- 1/4 cup brown sugar
- 2 garlic cloves (minced)
- 1.5 cups apple slices
- 1 bag wide egg noodles
- Unsalted butter
- Fresh parsley (for garnish)
- 1.5 tbsp high-heat oil (vegetable or avocado oil)
- Salt to taste
- Black pepper to taste
- 2.5 tbsp chicken soup base
- 1 cup water
- 1/2 yellow onion (diced into 1/2-inch pieces)
Instructions
- Season the pork loin with salt and black pepper.
- In a large pot or Dutch oven, heat high-heat oil over medium-high heat. Sear the pork on all sides until golden brown.
- Remove the pork and add sauerkraut, chicken soup base, brown sugar, garlic, apple slices, water, onion, salt, and pepper to the pot. Stir well.
- Place the seared pork back on top of the mixture and cover with a lid. Reduce heat to low and simmer for 90 minutes until tender.
- Cook egg noodles according to package instructions; drain when done.
- Stir in butter into the sauerkraut mixture once cooked. Shred or slice the pork as desired and serve over noodles topped with fresh parsley.
