Ingredients

  • 2.5 lb pork loin roast
  • 1.5 lbs sauerkraut (drained and rinsed)
  • 1/4 cup brown sugar
  • 2 garlic cloves (minced)
  • 1.5 cups apple slices
  • 1 bag wide egg noodles
  • Unsalted butter
  • Fresh parsley (for garnish)
  • 1.5 tbsp high-heat oil (vegetable or avocado oil)
  • Salt to taste
  • Black pepper to taste
  • 2.5 tbsp chicken soup base
  • 1 cup water
  • 1/2 yellow onion (diced into 1/2-inch pieces)

Instructions

  1. Season the pork loin with salt and black pepper.
  2. In a large pot or Dutch oven, heat high-heat oil over medium-high heat. Sear the pork on all sides until golden brown.
  3. Remove the pork and add sauerkraut, chicken soup base, brown sugar, garlic, apple slices, water, onion, salt, and pepper to the pot. Stir well.
  4. Place the seared pork back on top of the mixture and cover with a lid. Reduce heat to low and simmer for 90 minutes until tender.
  5. Cook egg noodles according to package instructions; drain when done.
  6. Stir in butter into the sauerkraut mixture once cooked. Shred or slice the pork as desired and serve over noodles topped with fresh parsley.
