  • ¾ cup milk
  • 2 tablespoons unsalted butter, melted

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté onion and garlic until translucent (about 5 minutes).
  2. Add crushed tomatoes, vegetable broth, basil, oregano, salt, and pepper. Simmer for about 20 minutes.
  3. In a mixing bowl, whisk together flour, baking powder, garlic powder, and parsley. Fold in cheddar cheese.
  4. Mix milk and melted butter before adding to dry ingredients; stir until combined.
  5. Drop spoonfuls of dumpling batter onto simmering soup. Cover and cook for approximately 15 minutes until dumplings are puffy and cooked through.
