Ingredients
- 4 salmon fillets
- 1 tbsp butter
- 1 tbsp olive oil
- 2 cloves garlic
- 3–4 sun-dried tomatoes (sliced)
- 125ml dry white wine
- 250ml double cream
- 50g Parmesan cheese
- 30g fresh spinach
Instructions
- Pat the salmon dry and season with salt and pepper. Heat olive oil and butter in a non-stick frying pan over medium-high heat. Sear the salmon skin-side up until golden brown, about 6–7 minutes. Remove from pan.
- In the same pan, sauté minced garlic and sun-dried tomatoes for 30 seconds, then deglaze with white wine and let simmer until reduced by half.
- Stir in heavy cream and grated Parmesan until combined, add spinach, and return salmon to the pan. Simmer for another 5 minutes, seasoning to taste.
