  • 1 tablespoon finely minced garlic (4 cloves)
  • 2 tablespoons flour
  • 5 cups chicken broth
  • 4 cups baby gold potatoes (diced, unpeeled)
  • 1 (15.5-ounce) can navy beans
  • 1/2 cup sun-dried tomatoes (finely diced, plus more for garnish)
  • 2 cups half-and-half
  • Basil pesto

Instructions

  1. In a large pot over medium-high heat, warm olive oil and brown the ground Italian sausage with salt, pepper, and smoked paprika until fully cooked. Transfer to a plate and set aside.
  2. In the same pot, sauté diced onions and minced garlic until softened. Stir in flour and gradually add chicken broth, creating a thick base.
  3. Add diced potatoes, bring to a boil, then reduce heat to simmer until tender (about 15 minutes).
  4. Incorporate navy beans and sun-dried tomatoes; simmer uncovered for an additional 5 minutes.
  5. Lower heat and mix in half-and-half until heated through. Return sausage to the pot; stir well.
  6. Serve in bowls with a swirl of basil pesto on top.
