  • 1 tsp vanilla extract
  • 1 1/2 Tbsp corn starch
  • 1/2 cup white granulated sugar
  • 6 oz raspberries
  • 3/4 cup white granulated sugar
  • 1 Tbsp lemon juice
  • 1 tsp vanilla extract
  • 1/2 Tbsp cornstarch (mixed with a splash of cold water)
  • 4 oz white chocolate (melted)

Instructions

  1. Prepare the crust by mixing graham cracker crumbs, brown sugar, melted butter, and vanilla. Press firmly into a springform pan.
  2. Melt half of the white chocolate and pour it over the crust; let it set.
  3. Beat cream cheese until smooth; add heavy cream, yogurt, eggs, vanilla extract, cornstarch, and sugar—mix until combined.
  4. Cook raspberries with sugar, lemon juice, and cornstarch until thickened. Fold half into the cheesecake mixture for swirls.
  5. Pour filling over crust and dollop remaining raspberry sauce on top; bake at 325°F for about 85 minutes.
  6. Cool in the oven for an hour before refrigerating overnight.
