  • 1.5 lbs Chicken Breast/Thighs
  • 1/4 cup Olive Oil
  • 1/4 cup Fresh Lemon Juice
  • 2 Tbsp Fresh Dill
  • 2 cloves Garlic
  • 1 tsp Dried Oregano
  • Salt and Pepper
  • 4 cups Cooked Quinoa or Rice
  • 1 large Cucumber
  • 1 pint Tomatoes
  • 1/2 cup Crumbled Feta Cheese
  • 1/4 cup Kalamata Olives

Instructions

  1. Marinate the chicken by whisking together olive oil, lemon juice, dill, garlic, oregano, salt, and pepper in a mixing bowl. Coat the cubed chicken in the marinade and refrigerate for at least 30 minutes.
  2. Preheat the oven or grill to 400°F. Cook the marinated chicken on a baking sheet or grill for 18–20 minutes until fully cooked (165°F).
  3. Divide cooked quinoa or rice into serving bowls and top with diced cucumber, halved tomatoes, sliced red onion, cooked chicken, crumbled feta cheese, and Kalamata olives.
  4. Drizzle with extra olive oil or lemon juice if desired.
